This fresh gazpacho with watermelon always works well. A great refreshment on a hot summer day!
Ingredients
- ½ watermelon
- 3 ripe tomatoes
- ½ cucumber
- ½ lime clove of garlic
- 2 tbsp extra virgin olive oil
- few sprigs of basil scoop
- ice cubes
Preparation
- Blend all ingredients to desired thickness. Set aside a few basil leaves and a thin slice of lime for garnish.
- If desired, season with fresh pepper. Because of the lime and garlic it doesn't need much extra.
- Tip: use frozen pieces of watermelon instead of ice cubes. Also delicious as an ice cream.
