Summer gazpacho

This fresh gazpacho with watermelon always works well. A great refreshment on a hot summer day!

Ingredients
  • ½ watermelon
  • 3 ripe tomatoes
  • ½ cucumber
  • ½ lime clove of garlic
  • 2 tbsp extra virgin olive oil
  • few sprigs of basil scoop
  • ice cubes
Preparation
  1. Blend all ingredients to desired thickness. Set aside a few basil leaves and a thin slice of lime for garnish.
  2. If desired, season with fresh pepper. Because of the lime and garlic it doesn't need much extra.
  3. Tip: use frozen pieces of watermelon instead of ice cubes. Also delicious as an ice cream.
