Sweet potato-broccoli burgers

A tasteful combination of vegetables, turmeric, garlic, buckwheat and eggs. The perfect way to fit in some extra vegetables.

8 burgers

Ingredients
  • 250 g sweet potato
  • 200 grams of broccoli
  • 2 cloves of garlic
  • 2 tablespoons of coconut oil
  • 150 grams buckwheat flour
  • 3 tablespoons crushed linseed
  • 1 tablespoon baking powder
  • 1 teaspoon of turmeric
  • Sea salt and pepper
Preparation
  1. Clean the broccoli and remove the hard parts.
  2. Peel the sweet potato and cut into slices.
  3. Clean the garlic cloves and I cut small pieces. 
  4. First put the broccoli in a food processor or in the blender (you can chop it nice and small on the ice cube stand.) 
  5. Now put the sweet potato in the food processor. 
  6. Stir in 3 tablespoons of flax seeds, salt and pepper to taste.
  7. Melt the 2 tablespoons of coconut oil in a saucepan.
  8. In another bowl, mix the buckwheat flour with the turmeric and baking powder. 
  9. Add the melted coconut oil to the buckwheat flour.
  10. Mix the vegetables with buckwheat flour.
  11. Heat some coconut oil in a frying pan.
  12. Scoop the batter with two spoons into the pan, squash well in the shape of a burger. You can make a few burgers at once. 
  13. Keep the burgers on kitchen paper until serving them.

Leftovers can be kept in the fridge for 3 days.
