Vegan chocolate muffins

Teff is a gluten free grain rich in minerals and amino acids. You can make nice tasting muffins with teff, almond flour, chia seeds and raw cacao powder!

10 muffins

Ingredients
  • 1 tablespoon ground chia seeds + 4 tablespoons of water 
  • 50 g raw cacao powder 
  • 150 g teff flour
  • 50 g almond meal
  • 45 g coconut palm sugar
  • 1 teaspoon baking powder
  • pinch sea salt
  • 60 g coconut oil
  • 250 ml coocnut-rice milk
  • 50 g pumpkin seeds
  • 50 g walnut halves
Preparation
  1. Preheat oven to 180 C.
  2. Mix Chia seeds and the water in a cup and set aside for 10 minutes.
  3. Mix cacao powder, teff, almond meal and coconut sugar in a big bowl.
  4. Add baking powder and sea salt. 
  5. Melt coconut oil in a small pan, let cool down.
  6. Add coconut-rice milk and mix with the dry ingredients. Add 50 ml of water if mixture is too dry.
  7. Mix in pumpkin seeds and walnuts, keep some walnuts aside to decorate on top. 
  8. Bake for 22 minutes. After 22 minutes check whether a toothpick you stick into one or two of the muffins comes out dry. If it does, they are ready, if not, give them 3 more minutes and try again.
