Vegan apple hazelnut pie

The crust is made of ground hazelnuts, oatmeal coconut sugar and coconut oil. The filling is simple: apples, walnuts and cinnamon.

Ingredients

For the crust:

  • 140 g hazelnuts
  • 100 g oatmeal
  • 1 tbsp coconut palm sugar
  • Pinch sea salt
  • 110 ml water
  • 2 tbsp coconut oil

Filling:

  • 3 apples
  • Ground cinnamon
  • Raw walnuts 50 g
Preparation
  1. Preheat the oven to 180C/350F degrees.
  2. Place a cup filled with 110 ml water in the freezer.
  3. Grind the hazelnuts to flour in a blender or kitchen machine. Set aside in a bowl.
  4. Grind the oatmeal to flour.
  5. Mix the hazelnut flour, oatmeal, coconut palm sugar and sea salt in a bowl.
  6. Add the melted coconut oil and ice water. 
  7. Put the dough in a cake pan or silicon cake form.
  8. Wash and slice up the apples.
  9. Place the apples in 3 layers in the form and add cinnamon and walnuts to each layer. 
  10. Bak in 45-5 minutes until the crust is golden brown.
