Vegan strawberry cake

Use chickpea flour, apple sauce, baking powder and coconutpalm sugar for the cake, decorate with coconut cream and strawberries. Enjoy!

Ingredients
  • 150 g chick pea flour
  • 45 g coconut palm sugar
  • 1 teaspoon baking powder
  • 150 ml coconut rice milk
  • 2 el apple sauce
  • 400 ml coconut milk (refrigerated)
  • 150 g fresh strawberries
  • Silicon baking tray (23 cm)
  • Optional: powdered sugar
Preparation
  1. Preheat oven to 180 degrees Celsius.
  2. Mix chick pea flour with coconut palm sugar and baking powder in a bowl.
  3. Combine the coconut rice milk and apple sauce in another bowl and add to the other ingredients.
  4. Stir well until everything is combined.
  5. Use a spatula to get the mixture in the baking tray. 
  6. Bake the cake in 15 minutes in preheated oven. 
  7. Take out oven and let cool down. 
  8. Rinse the strawberries and make slices.   
  9. Scoop the coconut cream in a bowl, discharge the water. 
  10. Use a mixer or kitchen machine to make whip cream.
  11. Use a spatula to put the coconut cream on top of the cake.
  12. Decorate with strawberries (and powdered sugar if desired).
