Tessa's Oatmealcake

This oatmeal cake is easy and super tasty! Tessa's smoothies can be used for breakfast, snacks and even for dinner. Refreshing and surprisingly nutritious.

Ingredients
  • 400 g oatmeal
  • 3 eggs 
  • 125 ml organic (goat) yoghurt
  • 3 tbsp coconut palm sugar
  • 3 tbsp cinnamon
  • 2 small apples
  • 100 g naturel nuts
  • 4 tbsp pumpkin or sunflower seeds 
  • 125 g blue berries
Preparation
  1. Preheat oven on 180 degrees Celsius. 
  2. Whisk the eggs in a large bowl.
  3. Add coconut oatmeal, (goats) yoghurt, palm sugar and cinnamon. Mix well.
  4. Rinse apples and cut in small pieces. Add to the mixture.
  5. Add nuts, seeds and blue berries
  6. Bake the cake for 40-45 minutes and the muffins for 20-24 minutes in the oven.
  7. When the cake is ready let it cool down by removing the cake pan. 
  8. Keep in slices in the fridge or freezer.
