Tempeh salad

4 persons:

Ingredients
  • 1 crop Rucola, Oak lettuce or Little Gem lettuce
  • 1 block of tempeh, chopped into 1/4 inch cubes
  • 3 tablespoons tamari
  • 3 tablespoons extra virgin olive oil

Vegan Caesar Dressing

  • 2 tablespoons almonds (ground) or almond butter
  • 2 garlic gloves, minced
  • 2 tablespoons tamari
  • 1 lemon/lime, juiced
  • 3 tablespoons mustard
  • 100 ml water
  • 1 table spoon extra virgin olive oil
Preparation

Heat olive oil over medium heat. Add in tempeh cubes and lightly sautee until browned. Add in tamari and cook until fully absorbed. Remove the tempeh from heat and set aside.

For the dressing: blend the ingredients and pour over the salad.
