Gingerbread cake

The perfect treat to keep on hand during cold winter days. Made of almond flour, eggs, butter, coconut sugar and ground spices.

Ingredients
  • 4 eggs
  • 200 g almond flour
  • 100 g coconut sugar
  • 200 g real butter or coconut oil
  • 4 teaspoons speculaas spices
  • Pinch of sea salt
  • 100 g almonds
Preparation
  1. Preheat oven to 160 degrees.
  2. Melt butter in a pan.
  3. Combine almond flour, coconut sugar, speculaas spices and sea salt in a bowl. 
  4. Whisk the eggs and mix together with melted butter to the other ingredients. 
  5. Put the mixture in a cake form and place for 40-45 minutes in preheated oven.
  6. Let cool down, keep in the fridge or freeze in pieces.
