Pumpkin brownie

Gluten and dairy free. A healthy brownie with grilled pumpkin, cacao powder and 'speculaas' spices.

Ingredients
  • 400 g pumpkin

  • 50 g almond flour

  • 50 g oatmeal
  • 
2 tbsp flax seeds and 5 tbsp water

  • 40 g coconut sugar

  • 50 g cacao powder
  • 
1 tbsp ‘speculaas’ spices
  • 
1 teaspoon vanilla powder
  • 
2 teaspoon baking powder
pinch of sea salt
raw walnuts
Preparation
  1. Preheat oven to 180 degrees Celsius.
  2. Rinse the pumpkin, place for 20 minutes in oven until nice and soft. 
  3. Meanwhile soak the flaxseeds in water for about 20 minutes.
  4. After 20 minutes take pumpkin out and remove the pits. Cut in pieces. 
  5. Place pumpkin back in the oven and grill for about 20 minutes.
  6. Place pumpkin in blender or food processor until it becomes a nice puree. Add a bit of water when needed. 
  7. Combine dry ingredients (except for the walnuts) in a bowl and add the grilled pumpkin puree and walnuts. 
  8. Line a baking pan with parchment paper, add mixture and garnish with whole walnuts. 
  9. Bake in about 20-25 minutes until ready.
