Beetroots are rich in vitamins and minerals which taste great combined with apple cider vinegar, fresh mint, nuts and coriander. The perfect salad for a picknick.
Ingredients
- 4 Red beets, pre cooked
- 1 Red onion, cut in half and thinly sliced
- 1 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2 tsp Cumin
- 1 tsp Sea salt
- hand full Fresh mint leaves
- hand full cilantro leaves
- hand full walnuts or pecan nuts
Preparation
- Cut beets into small cubes and set aside.
- In a small bowl combine vinegar, olive oil, cumin and sea salt. Stir well and set aside.
- In a large bowl add in beets, fresh mint, fresh cilantro, sliced onions and dressing and toss until everything is mixed together.
- Top with more fresh herbs and nuts.
