Red beet salad
Beetroots are rich in vitamins and minerals which taste great combined with apple cider vinegar, fresh mint, nuts and coriander. The perfect salad for a picknick.
Ingredients
4 Red beets, pre cooked
1 Red onion, cut in half and thinly sliced
1 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
2 tsp Cumin
1 tsp Sea salt
hand full Fresh mint leaves
hand full cilantro leaves
hand full walnuts or pecan nuts
Preparation
Cut beets into small cubes and set aside.
In a small bowl combine vinegar, olive oil, cumin and sea salt. Stir well and set aside.
In a large bowl add in beets, fresh mint, fresh cilantro, sliced onions and dressing and toss until everything is mixed together.
