Quinoa-linzen-avocado-mango salade

2-4 persons

Ingredients
  • 200 g quinoa
  • 250 g lentils
  • 1 avocado
  • 1 mango
  • 20 cherry tomatoes
  • 100 g goat feta
  • 100 g lamb's lettuce
  • Ground pepper
  • Sea salt
Preparation
  1. Bring quinoa + water to a boil with the lid on (keep a close eye on it), then turn the heat down to simmer. Cook quinoa for 10 minutes.
  2. Follow the same principle to cook the lentils. Cook them for 15 minutes.
  3. Rinse the lentils in a strainer using cold water.
  4. Combine lentils and quinoa in a bowl and let quinoa cool down
  5. Chop the avocado and mango in pieces. Use ½ avocado and ½ mango per person.
  6. Finish of with lamb's lettuce, goat feta and cherry tomatoes.
  7. Add ground pepper and sea salt to taste.
