Pumpkin & nut pie

Ingredients
  • 300 g pumpkin
  • 2 garlic gloves
  • 1-2 red onions
  • 3 tsp. coconut oil
  • 15 g fresh coriander
  • 200 g mixed naturel nuts 
  • 4 eggs
  • Sea salt
  • Cake pan (silicon)
Preparation
  1. Preheat oven to 200 degrees Celsius. 
  2. Place the pumpkin for 15 minutes in the oven so it gets soft enough to cut in pieces.
  3. Sauté onion in coconut oil for 1 minute, then add garlic.  Cook until tender.
  4. Take the pumpkin out of the oven, remove the inside and chop in small pieces.
  5. Whisk eggs in a bowl.
  6. Mix in pumpkin, garlic, onion with nuts and coriander using a spoon. 
  7. Add sea salt to taste. 
  8. Pour mixture into prepared pan.
  9. Cook the pie in 25-30 minutes in preheated oven. 
  10. Let cool down, cut in pieces. Keep in fridge or freezer.
