Paleo Spicy Chicken Thighs with Oregano and Clove

Ingredients

2 servings:

  • 4 chicken thighs, with bone and skin
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 4 cloves of garlic, finely chopped
  • 8-10 fresh sage leaves, finely chopped
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground cloves
  • 1 teaspoon fresh grated ginger
  • Salt and pepper to taste
  • 2 tablespoons olive oil
Preparation

1. In a bowl mix the dried oregano, dried thyme, chopped garlic, chopped sage leaves, turmeric powder, ground cloves, grated ginger, salt and pepper.

2. Rub the chicken thighs thoroughly with the spice mixture, making sure all the chicken thighs are well coated. Let the chicken marinate for a while while you preheat the oven.

3. Preheat the oven to 200°C.

4. Heat an oven-proof skillet with olive oil over medium-high heat.

5. Place the marinated chicken thighs in the hot pan, skin side down. Fry them for about 5 minutes, or until the skin is golden brown and crispy.

6. Turn the chicken thighs over and fry for another 2-3 minutes on the other side.

7. Place the skillet with the chicken thighs in the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked and the internal temperature reaches 75°C.

8. Remove the chicken thighs from the oven and let them rest for a few minutes before serving.
