This recipe is created by Ietje and Maurits from wijsuikervrij.com. No rapid sugars that skyrocket your blood sugar levels. The sweet taste comes from sweet potatoe and figs.
Ingredients
- head of green lettuce
- 150 g sweet potato
- 50 g soft goat cheese
- 4 tablespoons pine seeds
- Two fresh figs
- Olive oil extra virgin
- Sea salt
- Ground pepper
Preparation
- Rinse sweet potatoes. Cut in little cubes and cook with a pinch of sea salt for 15 minutes. Check with a fork if the potatoes feel soft, then they are ready.
- Preheat a pan on medium fire. Roast the pine seeds until brown. Keep aside on a plate.
- Rinse the lettuce and divide over two bowls. Sprinkle with olive oil.
- Wipe the fresh figs gently, and cut them in half. Add sweet potato, goat cheese, pine nuts and figs.
- Add sea salt and ground pepper to taste.
