Chicken burger with sweet potato fries

This month a healthy, gluten, lactose and egg free recipe! Annemieke van Kooten created this healthy version of burger and fries.

Ingredients

Chicken burger

  • 250 g chicken filet
  • 1 teaspoon lemon juice 
  • 1 teaspoon Italian seasoning (mix Provençale)
  • 1 tbsp coconut oil
  • ground pepper and sea salt
  • 4 Portobello mushrooms
  • 2 crops little gem lettuce

Pear compote

  • 1 kg Conference pears
  • 2-3 teaspoons cinnamon 

Avocado mayonnaise

  • 1 avocado
  • juice of ½ lemon
  • 10-15 fresh basil leaves
  • ground pepper and sea salt

Sweet potato fries

  • 400 g sweet potato
  • ground pepper and sea salt
  • olive oil
Preparation
  1. Peel and core the pears, making sure to also nick out the stem which runs from the core to the top of the pear. Cut into chunks.
  2. Combine pears with cinnamon in a pan on low fire. 
  3. Stir and bring to shimmer until pears are cooked.
  4. Puree the pears in a blender or food processor. 
  5. When cooled down, set pears aside in the fridge.
  6. Preheat oven on 200 degrees Celsius.
  7. Cut each sweet potato in half lengthways, cut each half in half lengthways, then each piece in half again that look like fries.
  8. Line a baking sheet with parchment paper, add sweet potatoes and sprinkle with olive oil, and a tiny pinch of sea salt and black pepper.
  9. Bake for about 20-30 minutes, turn fries after 10 minutes. 
  10. Slice chicken filet in cubes.
  11. Combine chicken cubes, lemon juice, coconut oil, pepper, sea salt and seasoning in food processor.
  12. Pulse until the mixture looks like a paste. 
  13. Form 2 balls using your hands. 
  14. Form balls into a burger. 
  15. Cook the burgers in coconut oil in a pan until they are golden brown. 
  16. Rinse Portobello’s. Remove stems.
  17. Place burgers and Portobello mushrooms in the oven on 200 degrees Celsius.
  18. Combine avocado, lemon juice, basil leaves, sea salt and pepper in blender or food processor. 
  19. Mix into a creamy mixture. 
  20. Add extra lemon juice or olive oil to make mixture more creamy. 

Decoration

  1. Put 1 Portobello on a plate.
  2. Place rinsed leaves little gem lettuce into Portobello.
  3. Add a chicken burger.
  4. Top with avocado mayonnaise.
  5. Finish the burger with another Portobello.
  6. Add fries, pear compote and avocado mayonnaise.
