This salad contains fermented vegetables that nourish the good gut bacteria. The fresh and sour taste of this salad stimulates the taste buds and it is easy to prepare.
Ingredients
- 200 g of lettuce, chopped
- 1 avocado
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp olive oil extra vierge
- 2 tbsp vegan kimchi
- 225 g chickpeas
- hand full cherry tomatoes
- 4 tbsp toasted pumpkin seeds
- 1 tbsp black sesame seeds
Preparation
- Place the chopped lettuce into a large mixing bowl.
- Add the avocado, lemon juice, and olive oil.
- Rinse and chop tomatoes in halves.
- Add the kimchi, chickpeas, tomatoes and seeds.
- Season to taste with sea salt, and enjoy!
