Key lime pie

This is a creamy no-bake dessert. Perfect for the holiday season. Make sure you soak the nuts 1 day in advance. A vegan, gluten-free, and delicious pie!

Makes 1 pie

Ingredients

For the crust:

  • 100 g raw walnuts
  • 60 g Medjol dates
  • 20 g shredded coconut
  • 1 teaspoon cinnamon
  • Pinch of sea salt
  • teaspoon cinnamon

For the topping:

  • zest from 2 limes
  • 6 tbsp lime juice
  • 3 ripe avocado’s 
  • 160 g coconut cream, shaken
  • 15 g coconut oil
  • 1 -3 tbsp coconut flour, optional
Preparation

Prepare crust

  1. Soak walnuts at least for 6 hours in a bowl with water. Even better: soak them overnight.  
  2. Rinse walnuts and put them in a strainer. 
  3. Blend walnuts, Medjoul dates (no pits!), shredded coconut, cinnamon and seasalt in a blender or kitchen machine. Blend until you get a sandy consistency.
  4. Line a baking tin with parchment paper and add the ring. 
  5. Place all ingredients in baking tin, use a spoon to devide the mixture equally. 
  6. Also make sure there is crust around the edges.
  7. Place baking tin in freezer until the topping is made.

Prepare topping

  1. Blend avocado with lime juice and zest until smooth.
  2. Blend in coconut cream and coconut oil.
  3. Mixture should be thick and will further thicken up on refrigeration. To make it thicker you can blend in coconut flour. 
  4. Put into prepared crust and refrigerate for at least 4 hours or overnight.
