Italian Frittatas
A frittata is an Italian-style omelette. Ideal as a healthy lunch or quick evening meal. A perfect combination of vegetables with healthy fats and proteins. This is a recipe from Nora French from "Pioppie the Cookbook".
Ingredients
4 persons:
10 eggs
1/2 teaspoon salt, pinch of pepper
1 clove of garlic
200 grams of cherry tomatoes
200 grams of broccoli
3 spring onions
200 grams of salmon fillet
juice of 1/2 lemon
Preparation
Preheat the oven to 200 degrees and line an oven dish with baking paper.
Beat the eggs in a bowl, add salt and pepper.
Press the garlic, cut the tomatoes, broccoli and spring onion into pieces and add to the eggs.
Cut the salmon into pieces and sprinkle with lemon juice and a pinch of salt.
Pour the egg mixture into the baking dish and then divide the salmon over it.
Bake the frittata for 20 to 25 minutes.
Also delicious with mushrooms or spinach with feta.
