A frittata is an Italian-style omelette. Ideal as a healthy lunch or quick evening meal. A perfect combination of vegetables with healthy fats and proteins. This is a recipe from Nora French from "Pioppie the Cookbook".
Ingredients
4 persons:
- 10 eggs
- 1/2 teaspoon salt, pinch of pepper
- 1 clove of garlic
- 200 grams of cherry tomatoes
- 200 grams of broccoli
- 3 spring onions
- 200 grams of salmon fillet
- juice of 1/2 lemon
Preparation
- Preheat the oven to 200 degrees and line an oven dish with baking paper.
- Beat the eggs in a bowl, add salt and pepper.
- Press the garlic, cut the tomatoes, broccoli and spring onion into pieces and add to the eggs.
- Cut the salmon into pieces and sprinkle with lemon juice and a pinch of salt.
- Pour the egg mixture into the baking dish and then divide the salmon over it.
- Bake the frittata for 20 to 25 minutes.
- Also delicious with mushrooms or spinach with feta.
