Italian Frittatas

A frittata is an Italian-style omelette. Ideal as a healthy lunch or quick evening meal. A perfect combination of vegetables with healthy fats and proteins. This is a recipe from Nora French from "Pioppie the Cookbook".

Ingredients

4 persons:

  • 10 eggs
  • 1/2 teaspoon salt, pinch of pepper
  • 1 clove of garlic
  • 200 grams of cherry tomatoes
  • 200 grams of broccoli
  • 3 spring onions
  • 200 grams of salmon fillet
  • juice of 1/2 lemon
Preparation
  • Preheat the oven to 200 degrees and line an oven dish with baking paper.
  • Beat the eggs in a bowl, add salt and pepper.
  • Press the garlic, cut the tomatoes, broccoli and spring onion into pieces and add to the eggs.
  • Cut the salmon into pieces and sprinkle with lemon juice and a pinch of salt.
  • Pour the egg mixture into the baking dish and then divide the salmon over it.
  • Bake the frittata for 20 to 25 minutes.
  • Also delicious with mushrooms or spinach with feta.
