Oatmeal pepernoten with fennel seed

With oats, almond flour, spices, coconut oil, honey and fennel seed, you bake the most healthy pepernoten.

Ingredients
  • 150 g oatmeal
  • 1 egg
  • 5 teaspoons speculaaskruiden
  • 4 tablespoons coconut oil
  • 2 tablespoons honey
  • 2 tablespoons water
  • 1 teaspoon fennel seed
  • 50 g almond flour
Preparation
  1. Line a baking sheet with baking paper.
  2. Preheat oven to 175 degrees Celsius.
  3. Blend oatmeal for 30 seconds in a blender so you get a flour-like consistency.
  4. Whisk egg in a bowl.
  5. Add speculaaskruiden and oatmeal.
  6. Melt coconut oil on medium fire and add to the rest.
  7. Melt honey in a bowl by adding 2 tbsp. boiled water.
  8. Add honey and fennel seed to the mixture.
  9. Mix almond flour so the dough gets the right consistency. If it’s too wet at more almond flour. 
  10. Cook the pepernoten for 15 minutes in preheated oven.
