Oatmeal cake

12 muffins:

Ingredients
  • 6 eggs
  • cinnamon or speculaaskruiden
  • honey or agave
  • 250 g oatmeal
  • 110 g walnuts
  • coffee cup flax seed = lijnzaad
  • 125 g blue berries (frozen)
  • coffee cup dried apricots
  • coffee cup dried figs
  • silicon cake form (or 2 silicon muffin forms for 6 muffins)
Preparation
  1. Preheat oven on 175 degrees.  
  2. Cut dried apricots and figs in small pieces.
  3. Blend the 6 eggs with (a lot!) cinnamon or speculaaskruiden.
  4. Blend for at least 1 minute. This will improve the constitution!
  5. Add honey and blend for another minute. 
  6. Use a spoon to mix the oatmeal with the substance in the blender.
  7. Add nuts, seeds, blue berries and dried fruits.
  8. Cook the cake for 40-45 minutes and the muffins for 20-24 minutes in the oven.
  9. When the cake is ready let it cool down by taking it out of form
  10. Cut the cake in pieces and keep them in aluminum foil in the fridge.
