Oatmeal apple-banana cake

1 cake

Ingredients
  • 400 g oatmeal
  • 3 eggs
  • 3 tbsp coconut palm sugar
  • 3 tbsp cinnamon
  • 2 tbsp raw cacao powder
  • 3 scoops protein powder
  • 1 banana
  • 2 small apples
  • 150 g naturel nuts
  • 4 tbsp pumpkin or sunflower seeds
Preparation

1. Preheat oven on 200 degrees.
2. Whisk the eggs in a large bowl.
3. Fill up a shaker with 600 ml water, add protein powder and shake well for about 30 seconds.
4. Add coconut palm sugar, cinnamon, oatmeal and the protein mixture.  Mix well.
5. Rinse apples and cut in small pieces. Slice up the banana. Add apple to the mixture, keep banana aside.
6. Add a layer of the mixture to a cake pan (or use 12 muffin cups) and work layer by layer: banana, mixture, nuts, mixture, seeds, mixture.
7. Cook the cake for 40-45 minutes and the muffins for 20-24 minutes in the oven.
8. When the cake is ready let it cool down by removing the pan. Cut the cake in pieces and keep them in aluminum foil in the fridge or freezer.
