Green coconut milk curry

Cook the green beans and broccoli in cococnut milk and green curry paste. Warming and nourishing. Topping: fresh coriander and pumpkin seeds.

Ingredients:

  • 1 tablespoon coconut oil
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons green curry
  • 1 can coconut milk (400ml)
  • 2 handfuls green beans
  • 1 cup broccoli
  • 1 red bell pepper
  • 2 cod filets (optional)
  • 1 handful fresh coriander
  • Pumpkin seeds as a topping

Sides:

  • 1/2 cupjasmine rice, quinoa or cauliflower rice
Preparation
  1. In a small pot cook rice or quinoa. Fluff with a fork and set aside.
  2. In a large skillet on medium heat, add the coconut oil, garlic and onions, saute for 3-5 minutes until translucent.
  3. Add in green beans, broccoli, curry paste and coconut milk, stir well to combine.
  4. Reduce the heat and simmer on low for 10 minutes to allow broccoli and beans to soften.
  5. After 10 minutes add red bell pepper. Cook for another 3 minutes.
  6. Remove curry from the heat, transfer to bowls, top with fresh coriander and pumpkin seeds.
  7. Serve with jasmine rice, quinoa or cauliflower rice.
