Gluten free quiche

6 portions:

Ingredients
  • 8 eggs, beaten 
  • 225 g frozen spinach 
  • 450 g cottage cheese 
  • 1 bunch green onion, finely chopped (white part only)
  • 2 red onions
  • 250 g mushrooms, sliced 
  • 2 cloves garlic, minced 
  • 1 tbsp coconut oil 
  • 150 g unsalted, mixed nuts
  • 100 g sunflower seeds
  • sea salt 
  • freshly ground pepper 
Preparation
  1. Preheat oven to 325 degrees F (165 C).  
  2. Lightly grease a 9-inch baking dish.
  3. Sauté garlic in oil for 1 minute, then add onion, mushrooms, and green onion.  Cook until tender.
  4. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. 
  5. Drain off all remaining liquid from the spinach. 
  6. Stir in eggs, cottage cheese, sautéed onions and mushrooms.  
  7. Add nuts, seeds, salt and pepper, to taste. 
  8. Pour mixture into prepared pan.
  9. Bake uncovered in oven for 1 hour, or until eggs are set.
