Ingredients
- 200 g oats (gluten free if necessary)
- 200 ml warm water
- 1 tbsp apple vinegar
- 3 eggs
- 100 g sesame seeds
- 100 g ground flaxseeds
- 100 g pumpkin seeds
- 1.5 tsp baking powder
- 25 g almond meal
Preparation
- Stir together oats, water and vinegar. Leave to soak for 2 hours.
- Preheat oven to 160 degrees Celsius (320F).
- Grind seeds to a fine powder. This works really well in a Nutribullit or coffee bean grinder. Add seed flour to a medium sized bowl and whisk together with baking powder and almond meal.
- In a separate bowl, whisk eggs into the soaked oats.
- Add wet ingredients to dry and mix well.
- Shape dough into balls using a spoon and line them up baking paper on a lined baking sheet. You can make them extra pretty by sprinkling some pumpkin and sunflower seeds on top.
- Bake for 30-35 minutes.
