Gluten free bread rolls

Easy to make and delicious!

12 rolls

  • 200 g oats (gluten free if necessary)
  • 200 ml warm water
  • 1 tbsp apple vinegar
  • 3 eggs
  • 100 g sesame seeds
  • 100 g ground flaxseeds
  • 100 g pumpkin seeds
  • 1.5 tsp baking powder
  • 25 g almond meal
  1. Stir together oats, water and vinegar. Leave to soak for 2 hours.
  2. Preheat oven to 160 degrees Celsius (320F).
  3. Grind seeds to a fine powder. This works really well in a Nutribullit or coffee bean grinder. Add seed flour to a medium sized bowl and whisk together with baking powder and almond meal.
  4. In a separate bowl, whisk eggs into the soaked oats.
  5. Add wet ingredients to dry and mix well.
  6. Shape dough into balls using a spoon and line them up baking paper on a lined baking sheet. You can make them extra pretty by sprinkling some pumpkin and sunflower seeds on top.
  7. Bake for 30-35 minutes.
