Roasted tomato soup

This soup is a great starter and I am sure you will impress your friends. Even as lunch of just a small bowl gives you a stuffed feeling. This soup contains roasted tomatoes, red pepers, onions, garlic and anchovies filets. You finish it with some crumbled goats feta, rosemary or some pumpkinseeds. Enjoy your meal!

Ingredients
  • 550 gram tasty tom tomatoes
  • 2 red onions
  • 3 garlic gloves
  • 1 stalk Rosemary
  • 4 tbsp olive oil
  • 1 red pepper
  • 4 anchovies filets
  • 2 bouillon cubes (without MSG!)
  • 1 liter water
  • 80 g goats feta
Preparation
  1. Preheat oven to 200 C.
  2. Clean the onion and garlic, chop them up.
  3. Rinse the tomatoes and cut in halves.
  4. Cut the Rosemary leaves in smaller pieces. 
  5. Rinse the red pepper, cut in two halves, take the seeds out and cut in pieces.
  6. Cut the anchovies filets.
  7. In a baking sheet combine olive oil, Rosemary, red pepper and anchovies.
  8. Add in tomatoes, onions and garlic.
  9. Place for 45 minutes in preheated oven. Stir after 20 minutes.
