Roasted vegetables with cinnamon

Oven roasted cauliflower carrots, red bell peper, parsnips, zucchini and garlic in coconut oil and cinnamon. Easy recipe, wait 40 minutes and enjoy!

Ingredients
  • 1 head cauliflower or romanesco
  • 250 g carrots
  • 1 red bell pepper
  • 1 small zucchini
  • 2 parsnips 
  • 6 whole garlic cloves
  • 3 tbsp coconut oil
  • 1 tbsp ground cinnamon
  • sea salt
Preparation
  1. Preheat oven to 200° Celsius. 
  2. Rinse vegetables, halve lengthwise, cut into small pieces.
  3. Melt coconut oil in a pan on low fire.
  4. Add cinnamon.
  5. Add vegetables and stir until all are coated.
  6. Place vegetables and garlic in a single layer on a baking sheet.
  7. Bake for 30 minutes in preheated oven.
  8. After 30 minutes check and roast another 10-20 minutes until they are golden and crispy.
  9. Let cool down and season with sea salt.
