Falafel

Ingredients
125 g sunflower seeds
500 g cooked chickpeas
2 shallots
2 garlic gloves
3 tbsp. olive oil
Sea salt
Ground pepper
Dressing:
4 tbsp. tahini
juice of ½ grapefruit
Salad:
75 g spinach
10 mini tomatoes
8 Kalamata olives
meat of ½ grapefruit
Preparation
Soak sunflower seeds for 3 hours in water.
Preheat oven to 200 Celsius.
Line a baking sheet with parchment paper.
Rinse sunflower seeds in a strainer and pulse in a blender or food processor for about 30 seconds.
Add chickpeas and olive oil, pulse 1 minute longer. Add 50 ml water if consistency is too thick.
Put mixture in a bowl.
Chop up onion and garlic and pulse in blender for 20 seconds.
Add to mixture, add sea salt and pepper to taste.
Using a tablespoon and your hands and form 25 round falafels. Place on baking sheet.
Bake in middle of oven for 15 minutes, turn and bake for another 15 minutes.
Using a spoon to mix grapefruit juice and tahini in a bowl until creamy.
Make a salad by combining spinach,, tomato and Kalamata olives.
Peel of the skin of the grapefruit and cut meat in slices.
Serve with tahini dressing and 4 falaffels per person.
