Mix the dry ingredients: In a bowl, combine the oat flour, almond flour, and baking soda.
Make the dough: Whisk the eggs and mix them with the melted butter (or coconut oil) and honey (or coconut sugar). Add this mixture to the dry ingredients and stir well.
Add the chocolate: Fold in the chopped dark chocolate.
Shape the cookies: Form small mounds of dough on the baking tray and gently press them down. Leave some space between each cookie.
Bake: Bake for about 12 minutes, until golden brown.
Let them cool: Allow the cookies to cool on the baking tray before moving them, so they firm up.
