Cashew cacao cookies

Keto and Paleo, but most of all very tasty! Protein rich thanks to the collagen protein powder. Ideal post-workout or after dinner dessert.

Ingredients
  • 150 g raw cashew nuts
  • 2 tbsp C-8 MCT oil
  • 4 tbsp collagen protein powder
  • 50 g coconut flour
  • ½ teaspoon cinnamon
  • 100 ml plant milk
  • 2 tbsp cacao nibs
Preparation
  1. Soak cashews for 2 and half hours. Rinse and keep in strainer.
  2. Add soaked cashews with C-8 MCT oilto a blender. Blend for 60 sec on low speed.
  3. Mix collagen, coconut flour, and cinnamon in a bowl. 
  4. Combine with the cashew mixture and add plant milk.
  5. Add cacao nibs to the mixture using a spoon. 
  6. Form balls and place on baking sheet. 
  7. Bake for 10 minutes in preheated oven at 180 degrees Celsius.
