Red beets brownie

Ingredients
  • 250 g cooked red beets
  • 4 eggs
  • 150 g almond flour
  • 6 tbsp raw cacao powder
  • 100 g oatmeal
  • 100 g butter or coconut oil
  • 75 g coconut sugar
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar
Preparation
  1. Preheat the oven to 180 degrees.
  2. Make a puree of the beets in a blender 
  3. Whisk the eggs in a bowl.
  4. Add almond flour, raw cacao powder, oatmeal and coconut sugar.
  5. Melt the butter/coconut oil in a small pan.
  6. Add butter, baking soda and apple cider vinegar.
  7. Spoon the mixture to a silicone baking pan (lined with parchment paper). 
  8. Bake in the center of a preheated oven for 35 minutes until firm.
  9. Let cool for 15 minutes before cutting in pieces.
