Cauliflower purée

A low-carbohydrate and healthy alternative to mashed potatoes. Flavored with garlic, sea salt and butter or coconut oil.

Ingredients
  • 1 medium head of Cauliflower
  • 2-3 garlic cloves
  • 3 ounces of butter
  • 1 teaspoon of seasalt
  • ½ teaspoon of groud pepper
  • extra virgin olive oil to taste
Preparation
  1. Bring a large pot of water to the boil.
  2. Cut the cauliflower into evenly sized florets.
  3. Gently add the cauliflower to the boiling water and cook for 5-8 minutes, until the cauliflower is tender.
  4. Drain the cauliflower really well using a strainer and return it to the warm pot. 
  5. Add the garlic, butter, sea salt and pepper.
  6. Blend the cauliflower with a good stick blender until there are no lumps.
  7. Allow the mash to sit and rest for 3 minutes and then blend a second time. This rest and blend step makes the cauliflower extra smooth and creamy.
  8. Add olive oil to taste.
