Beet burgers

Beets are a true superfood, rich in essential vitamins and minerals. Beets help cleanse the blood and create more red blood cells.​ These burgers are perfect for a picknick or a day at the beach.

Ingredients
  • 3 red beets
  • 3 carrots
  • 1 lemon
  • 2 eggs
  • 3 tbsp chia seeds
  • 2 shallots
  • 100 g oatmeal
  • 1 teaspoon ginger
  • 1 teaspoon curcuma
  • Ground pepper and sea salt
Preparation
  1. Preheat oven to 200 g Celsius. Place baking paper on the baking sheet.
  2. Rinse the beets and carrots. Chop in pieces.
  3. Place chunks in food processor or blender and add the juice of 1 lemon. 
  4. Combine in a bowl and add Chia seeds. 
  5. Chop up the shallots. 
  6. Combine eggs, ginger, curcuma, shallots, pepper and sea salt.  Mix well. 
  7. Add oatmeal and let it soak for 15 minutes. 
  8. Use a table spoon to scoop the mixture on the baking sheet. 1 tablespoon = 1 burger. 
  9. After 7 minutes your burgers are ready!
