Banana bread

Ingredients
  • 3 eggs
  • 1 cup coconut flour
  • 1 cup water
  • 1 tbsp cinnamon
  • 3 bananas
  • 1 zucchini
  • 4 tbsp Chia seeds
  • 6 tbsp pumpkin seeds
  • 100 g walnuts or raw mixed nuts
Preparation
  1. Preheat oven to 200 Celsius.
  2. Blend 4 small bananas (or 2 big ones) until soft and creamy.
  3. Cut the zucchini and blend for about 30 seconds. Add water if necessary.
  4. Whisk 4 eggs in a bowl.
  5. Add 1 cup (125 g) Coconut flour, 1 cup water and 1 tbsp cinnamon.
  6. Mix bananas and zucchini with the rest.
  7. Add 4 tbsp Chia seeds, 6 tbsp pumpkin seeds and 100 g walnuts/raw mixed nuts. 
  8. Put the mixture in a cake pan and cook for about 40 - 45 minutes.
