Apple blueberry mini pancakes

Ingredients
  • 3 eggs
  • 250 ml (goats) yoghurt
  • 2 tbsp. water
  • 300 g oatmeal
  • 1 apple
  • 150 g blue berries
  • coconut oil
Preparation
  1. Add yoghurt and 2 tbsp. water.
  2. Mix oatmeal with eggs and yoghurt.
  3. Add more water to get the right consistency.
  4. Rinse apple and chop in pieces.
  5. Stir apple and blueberries in the mixture.
  6. Heat a pan with 1 teaspoon coconut oil.
  7. Use a silicon spatula to divide the oil.
  8. Use 1 tbsp of the mixture per pancake (about 6 cm in diameter).
  9. Cook pancakes on low fire, turn after 4 minutes.
  10. Let cool down on a plate and keep in the fridge for 3 days.
  11. Serve with 1 teaspoon honey + 1 tbsp shredded coconut.
  12. Or with goat cheese, walnuts and honey if you like!
