Apricot & Fig Bread
Delicious cake with bananas, eggs, coconut flour, chia seeds, dried apricots and figs.
Ingredients
3 large ripe bananas (300g)
50 g coconut oil, melted
50 ml coconut-rice milk
4 large eggs
75 g coconut flour
75 g chia seeds
1 tbsp cinnamon
2 tsp baking powder
1 pinch of sea salt
45 g chopped dried brown apricots
35 g chopped dried figs
Coconut flakes and chopped nuts
Preparation
Preheat oven to 150 degrees Celsius.
Break apart banana pieces into a medium sized bowl. Add the melted coconut oil, eggs, and coconut-rice milk. Blend well with a hand blender (or use an actual blender).
In a separate bowl, combine the coconut flour, chia seeds, cinnamon, baking powder and salt. Whisk together. Add in chopped dried fruits and mix well, preventing clumping.
Pour the wet ingredients over the dry and thoroughly combine using a spatula. Allow this to sit for 5-10 minutes.
While the chia seeds and coconut flour are soaking up the liquids, grease a 12x24cm loaf pan and line with baking paper. You can also use a silicon cake form. Pour batter into pan and smooth the top using the spatula.
